I first heard about Un Mundo Mexican Grill on Eater SD, and since it’s just down the street from my home, decided to check it out. S and I are always looking out for new places to eat in UTC, and we have been really hoping for a good Mexican food option.
It took over the old Regents Pizzeria spot – everything has been remodeled to have a “modernist” look – sleek metallic tables and chairs, blue mood lighting… it looks quite cool and different.
The menu (available online here) reminded us a bit of Chipotle – build-your-own tacos, burritos, bowls, and salads. Except instead of picking out everything from a bar, you circle your options on a piece of paper. Everything is $8.95, unless you want two proteins or guacamole, which have surcharges.
